Cut quinces into 4 pieces and clean out the inside only, leave the peel on. Put in baking tray and cover with Cellar 62. Add cinnamon and cloves, 1 glass of sugar and a little lemon juice. Bake until the quinces are cooked through. When we serve the quince we sprinkle with toasted white almonds.
